Radish recipe ideas...



Radish confetti with salsa verde

You will need - 2 bunch of radishes, For the salsa verde: 2 anchovies in oil drained, large handful of parsley, small handful of mint leaves, 1 tbsp capers, 3 tbsp olive oil plus extra for drizzling, Dijon mustard,1 tbsp red wine vinegar

Put all the salsa verde ingredients in a mini chopper (or use a hand blender) and blitz to a beautiful bright green sauce, adding a drizzle more olive oil.

Top and tail the radishes, reserving a few of the youngest, perkiest leaves, and pop them into iced water. Carefully slice the radishes into wafer-thin slices on a mandolin, using a guard, or with a knife – mind your fingers!

Pile the radish slices roughly into a circle in the centre of 4 chilled plates. Drain the leaves and scatter around the outside of the radishes. Splodge little drops of the salsa over the radishes and drizzle the leaves with a little olive oil. Season everything with sea salt and serve.



Baked trout with fennel, radish & rocket salad

You will need - 2 whole trout, scaled and gutted, ½ bunch thyme, 2 lemons, 1 sliced, 1 juiced, 2 tbsp olive oil, plus extra to drizzle, 1 large bulb fennel, finely sliced, 100g radishes, finely sliced, 1 tbsp capers, chopped large handful of rocket.

Heat oven to 200C/180C fan/gas 6. Slash the trout's skin three times on both sides then stuff a thyme branch into each cut. Lay the fish on a baking sheet and fill the cavity with the lemon slices and remaining thyme sprigs. Season the fish, drizzle over some olive oil then bake it for 15-20 mins until cooked through. Meanwhile, mix lemon juice with olive oil, then pour over the fennel and allow to stand for 10 mins. Stir in the radishes and capers and season. Mix the rocket through the fennel and radish salad just before serving with big bits of the flaked trout.
